Eyes of Knives plays during the game's menu and when you speak to Lord British. The song is by far the longest song in the game and only a single loop is recorded.
The title is translated from the Ultima Mix album (ウルティマ-瞳のナイフ, Ultima-Hitomi no Knife), however the title may be in reference to the arranged version rather than the original since this is the only song on the album that doesn't have a straight arranged version. Instead, there is only a full song composed by Tsugutoshi Goto, with lyrics by Yasushi Akimoto, and vocals performed by Noriko Hidaka.
Games
Ultima: Exodus (NES)
The NES song is the original version of the tune. The song is track 2 in the NSF file and is played on the RP2A03.
Ultima: Fear of Exodus (MSX2)
The song was ported to the MSX PSG which gives it a flatter sound. It is track $09 in the KSS file.
Lyrics
These are the lyrics from the rearrangement on the Ultima Mix album.

Unofficial Translation
Blue sunlight spills through the window
Brilliant clock without numbers
Curtains sway like palmtrees
A fragrant smell of distant summer
In his arms I feel like a marionette
His magic manipulates my mind
The love of Ultima is the eyes of knives
I can not move when you are staring
The love of Ultima is the eyes of knives
Please do not look at me, as it is
